A Recipe I Need to Share

Every week I do a girls night with my good friend Kaitlyn.  We (usually) try to make a healthy meal, enjoy some wine and watch movies.  Recently, we made a delicious meal that I cannot keep to myself.  It was awesome!  Unfortunately we devoured the food before I thought to take a photo, but trust me, you will want to try this.

Stuffed Portabella Mushrooms "Cheesesteak"

This Recipe serves 4

Ingredients
  • 4 Large portabella mushrooms
  • 1 small package of goat cheese 
  • 1 small block of a nice cheddar cheese
  • Half of a white onion
  • Spices to taste (we used some garlic, onion salt, and pepper  (feel free to use whatever you like, we just kept it pretty simple)
  • 1 teaspoon Worcestershire sauce
  • 1.5 lb ground bison meat
    • We chose bison because we wanted to try something different and it is a very lean meat.  It also will leave you with some great flavor!  However, feel free to use ground chicken, turkey or beef 

Cooking Instructions

1Preheat oven to 350
2.  In a pan, heat up a little extra virgin olive oil and toss in the onion until they are transparent.
3. Season the bison meat with your various spices and then add that to the pan, you just want to brown the meat so you know it will cook when you put everything in the oven later.  Be careful not to overcook the bison meat, just a few minutes until it is mostly brown is fine.
4.  Remove the meat from heat and set aside so it can cool down a bit
5.  While the meat is cooling, put the goat cheese in a small bowl and shred the cheddar cheese in with it. Mix together (it will come together like a nice and creamy cheese spread) Side note: we did not use all of the cheese, but use as much as you want!
6.  Clean your mushrooms, use a spoon to scrape the insides and place on a baking sheet so they are ready to be stuffed!
7.  Spread some cheese in the bottom of the inside of your mushrooms
8.  Place the meat into the mushrooms, feel free to add some cheese mixture as you are stuffing your mushrooms in "layers" (cheese, meat, cheese, meat, etc.) while you stuff each mushroom.
9. Put some cheese spread on top and pop it all in the oven!
10. Allow to cook for approximately 30 minutes.  It may take longer, you just need to make sure your meat is cooked all the way through! 
11. Enjoy!


As a side dish, we had quinoa mixed with bell peppers.


Probably one of my favorite things we have made recently.

for future blogging...I may like some help/ideas

I want to start this guy up again and be more consistent...I have some ideas for topics, but before I officially begin, do me a favor and comment or text me some thoughts on what you would like to see posted on the blog!
